I use this in my latex_mode_hook() (the only mode  where I use folder):

        _Reserved_Key_Prefix = "\006"; % ^F
        folding_mode();
        _Reserved_Key_Prefix = "\003";

and all the folding command are prefixed by a ctrl-F (yes, I lose
move-forward, but I use exclusively the arrow keys for this...)
