The "enhanced" ispell mode from http://jedmodes.sf.net/mode/ispell does
exactly that:
* Providing the custom variable Ispell_Program_Name (allowed values are
"ispell" and "aspell").
* Auto-guessing the correct value by looking for aspell on the path and
reverting to ispell if not found.
Users of Debian (or Ubuntu) can get this most easily by installing the
jed-extra package.
